Hello! I have got some lovely recipes coming up for you to have a look at. One of my favourite easy quick and deliciously healthy meals at the moment are these Sweet Potato and Cranberry Burgers; great for dinner parties, BBQ's and as a family meal, keep reading for the recipe.

100g sweet potato 3tbsp olive oil 100g quinoa 11/2tsp reduced salt bouillon powder 30g unsweetened cranberries soaked for 30 mins 10g parsley chopped Level tbsp nutritional yeast Level tbsp arrowroot 1 egg white Pinch of Himalayan pink salt and pepper
Chop sweet potato place on a baking sheet drizzled with olive oil, and bake for 25 minutes at 170/ gas mark 3. Blend into a purée.
Cook the quinoa with the bouillon and twice the volume of water for 20 minutes or until tender. Then drain.
Mix the sweet potato, the quinoa with the remaining ingredients, then form the mixture into burgers.
Heat some olive oil in a frying pan and cook the burgers for a couple of minutes on each side.
Transfer to a lightly greased baking sheet and bake for 15 minutes at 180c/ gas mark 4.
